Red Velvet Cake Pops

Funny, but true – my child’s most toxic habit is that she thinks she is getting a cake pop from Starbucks every time we go to Target. While I enjoy treating her every once in a while, I thought it would be fun to make her some for Valentine’s Day instead of buy them.
Needless to say, these were a huge hit with Emerson.

Picking the flavor was an obvious choice.. I cannot think of a better option than red velvet for Valentine’s Day. The red hues are so festive! And decorating is effortless. Just pick your favorite sprinkles.
I think the next flavor will be Funfetti with rainbow sprinkles, because these are so fun to make and something you can do with the kiddos.

If you don’t have cake pop sticks (lollipop) sticks, you can still make these and serve them as cake balls/truffles.
The recipe I have shared includes a small batch cream cheese frosting recipe. You can substitute this with store-bought cream cheese frosting from the baking aisle.
